Deep aromas of black cherry, cassis, and blackberry unfold with hints of violet, black pepper, and tobacco. The palate is rich and structured, with layers of licorice, vanilla, and spice woven into smooth tannins. Aged 10 months in 70% American oak.
Union Sacré, nestled in the heart of Paso Robles' Tin City, founded by two friends from opposite corners of the globe—Xavier, a WSET-certified winemaker from France, and Philip, a self-taught designer from Michigan with a love for van life—the winery is a blend of diverse backgrounds and shared passion. Together, they bring over 35 years of experience in Central Coast winemaking. Xavier has honed his craft at some of the region’s most prestigious wineries, while Philip sharpened his skills at Proof Wine Collective. Union Sacré produces elegant, single-vineyard, single-varietal wines designed to complement any table. With a focus on varietals that echo the Alsace region of France, such as Pinot Noir, dry Gewürztraminer, Riesling, and Pinot Gris, these wines offer a perfect balance of refinement and approachability.
