Union Sacré, nestled in the heart of Paso Robles' Tin City, founded by two friends from opposite corners of the globe—Xavier, a WSET-certified winemaker from France, and Philip, a self-taught designer from Michigan with a love for van life—the winery is a blend of diverse backgrounds and shared passion. Together, they bring over 35 years of experience in Central Coast winemaking. Xavier has honed his craft at some of the region’s most prestigious wineries, while Philip sharpened his skills at Proof Wine Collective. Union Sacré produces elegant, single-vineyard, single-varietal wines designed to complement any table. With a focus on varietals that echo the Alsace region of France, such as Pinot Noir, dry Gewürztraminer, Riesling, and Pinot Gris, these wines offer a perfect balance of refinement and approachability.
Union Sacre was inspired by Alsace, France and the friendship of the two winemakers, Xavier and Philip. They met working in the industry on the Central coast of California and became fast friends. Philip asked Xavier what kind of wines he would make if he was able to and Xavier responded with Champagne and Riesling. Philip then asked Xavier if they could make a Riesling for Philip's upcoming wedding, and the answer was yes! After Philip's wedding they had some extra bottles and decided to begin selling them, after they sold out, they had been asked if they would want to continue to make wines and that was that.
Philip and Xavier say that their wines are "made for a table of friends, by two friends." the symbol on the label comes from an ancient symbol of the sun and moon meeting, or two worlds, and so they felt it was a perfect representation of how they came to be friends, meeting in the middle and from two different worlds.
